After meticulous handpicking, overripe and unripe cherries are carefully sorted out, leaving only the finest red cherries. These cherries are then spread on raised drying beds and sun dried under controlled conditions. To ensure uniform drying, they are turned frequently throughout the day until they achieve the optimal moisture level of 10.5%. This meticulous process preserves the beans' unique flavour profile and quality.
